Garlic Butter Mashed Potato Rolls are perfect for the holidays. The mashed potatoes make them soft, light and fluffy. Anyone is able to make these rolls and enjoy the perfect family dinner together.
These potato rolls take about 45 minutes to prepare, 1 hour and 45 minutes to rise, and then 30-35 minutes to cook, taking about 3 hours and 5 minutes to finish the process. This recipe yields about 15 servings (15 rolls).
After cooling, these rolls can be stored in an airtight container on the counter for 3 days, and up to a week in the refrigerator. Reheating is also an easy process, which requires 15 seconds in the microwave. Freezing is another easy storage option, which requires a freezer proof bag or airtight container and they can be frozen for up to a month.
There are about 15 ingredients needed for the bread recipe, including 1 15oz Russet potato (peeling and cut), ¼ cup of butter (softened but not melted), ¼ cup of whole milk, ½ cup of potato cooking water, 1 tbsp of granulated sugar (cane sugar also works), 2 ½ tsp active dry yeast, 2 large eggs (at room temperature), 4 ½ cup of all purpose flour, and 1 tsp of salt.
The garlic butter topping consists of 3 ingredients, including 1 tbsp of butter, 1 small garlic clove (finely minced), and 1 tsp of parsley (also finely minced).
For the first step, put the chopped potato into a small pot and pour in water to cover all the potatoes. Bring the pot to a boil and let it boil for 10 minutes with the lid on. After 10 minutes, check with a knife for soft potatoes, meaning they are ready. Then drain the water from the pot. Add butter and milk and use a potato masher to make mashed potatoes.
Then mix the potato cooking water and sugar in a large bowl, and add the active dry yeast. Let it bloom for 5 minutes. Then add the mashed potatoes and eggs into the bowl and mix with a spoon. Lastly, gradually add the flour and salt and mix until the dough comes together into a loose ball.
For the following step, knead the dough for around 5 minutes, lightly oil a large bowl, and then transfer the dough ball into the bowl. Cover the top with plastic wrap (don’t forget to poke some holes) and a clean kitchen towel (or 2 if needed) and set aside in a warm (not hot) place for 1 hour. The oven can be used on the lowest heat setting. If needed, keep the door slightly open to let the heat escape and not raise the temperature too high. The dough should double in size.
Place a piece of parchment paper in the bottom of a 9×11 baking dish and lightly oil the top of the parchment paper and sides of the dish. Divide the dough into 15 equal sized pieces and place them evenly into the baking dish (it should be 3 rows of 5). Following the same process, cover the rolls with plastic wrap with holes and a kitchen towel and set aside in a warm place for 45 minutes.
After those 45 minutes, place an oven rack in the middle of the oven and preheat the oven to 350 degrees Fahrenheit (don’t forget to remove the rolls first if the oven was used for rising). Uncover the rolls and bake them for 30-35 minutes. The rolls should look puffed up and golden. After baking, let the rolls cool before removing them.
While the rolls are cooling, melt the butter in a small frying pan over medium low heat and add the garlic. Cook for 1-2 minutes then remove the pan from the heat, stir in the parsley, and brush over the rolls.
The final step is to serve and enjoy. These rolls were one of the best rolls . They truly are light and fluffy, with a perfect hint of garlic and butter. These rolls can be paired with anything and can even be a small snack. They are such a good recommendation for anyone who wants to try cooking and making something delicious.
