Spooky pumpkin cupcakes and chocolate pretzel webs

With Halloween coming up, staying healthy while trying to enjoy spooky treats may be hard. However, here are two healthy alternatives to the unhealthy Halloween snacks a person would usually eat:
Spooky Pumpkin Cupcakes (pumpkin oat muffins with cream cheese frosting)
Muffins Ingredients-
3 cups cereal, oat bran flakes, 1 teaspoon salt
½ cup sugar
2 ½ cups flour, whole wheat
2 ½ teaspoon baking soda
½ tablespoon ground ginger
½ tablespoon ground cinnamon
½ cup golden raisins
1 large beaten egg
7 ½ ounces pumpkin, solid pack
1 teaspoon vanilla extract
½ quart buttermilk, low fat
6 tablespoons canola oil
Muffin instructions-
- Preheat oven to 400 degrees Fahrenheit
- Line 3 muffin pans with paper muffin cups
- In a large bowl, mix together cereal, salt, sugar, flour, baking soda, ginger, and cinnamon. Stir in raisins.
- In separate bowl, combine eggs, pumpkin, eggs, vanilla, buttermilk and oil and stir until blended.
- Mix wet ingredients with dry until batter holds together. Don’t overmix.
- Spoon batter into muffin cups (about ⅔ full). Bake for 17 minutes.
Makes 20 muffins
Cream cheese frosting ingredients-
12 ounces cream cheese
½ cup confectioners sugar
2 tablespoon low fat plain greek yogurt
½ teaspoon of vanilla extract
Cream cheese frosting instructions-
Put all ingredients in bowl and mix until smooth.
Chocolate Pretzel Webs ingredients-
80 pretzel sticks
1 ½ cups melted white chocolate
½ cup melted dark chocolate chips
16 raisins
Parchment paper
Chocolate Pretzel Webs recipe-
- Line a baking sheet with parchment paper, and arrange thin pretzel sticks in a star shape.
- Spoon some melted white chocolate in the center of the star to seal the sticks together.
- Then, drizzle the white chocolate around the sticks in a circular pattern to create the web.
- Place 2 raisins in the center and cover with melted chocolate to make the spider for the web.
- Place tray in refrigerator until chocolate hardens.
Makes 8 chocolate pretzel webs.
