Auntie’s Famous Pancit Recipe

The simple go-to comfort food for any Filipino family.

Pancit is a delicious traditional Filipino recipe which contains noodles, meat, and vegetables. It’s super fast and easy to make. There’s multiple different ways to make pancit, but this is the way my family makes it. 

This recipe came straight from my Auntie Sissy, she’s an amazing chef. She was more than happy to help me share a little bit of our tradition/culture with the Oakmont family. 

 

Ingredients:

  • 1 Yellow Onion (Julienned)
  • 1 Large Carrot (Grated)
  • 1 Chopped Celery 
  • 3 Garlic Cloves (Chopped)
  • 1 Pound Chicken Breast
  • 1 Pack Chinese Sausage
  • 1 Pound Uncooked Shrimp
  • ½  Head of Cabbage

 

  • 1 Pack Rice Noodles
  • 2 Quarts Chicken Broth
  • 1 Chopped Green Onion
  • Soy sauce

 

Instructions: 

  1. Be sure to wash the chicken breast then chop it into small bite-sized pieces. Slice the Chinese sausage and chop up the shrimp. 
  2. Use a wok and cook the first section of ingredients listed above on medium heat until fully cooked. Be sure to add salt and pepper to taste.
  3. In a separate pan, cook the rice noodles in the chicken broth on medium heat, adding ¼ cup of broth at a time until the noodles are fully cooked. You may not use all the broth, this depends on how many noodles you have. Add about a tablespoon of soy sauce.
  4. Allow the noodles to absorb the broth. Check to see if the noodles are fully cooked by eating a noodle. (The noodles should have a somewhat soft consistency, but NOT mushy. If they are mushy, they’re overcooked.) If the noodles are done and there’s still broth in them, be sure to drain out the rest of the broth. Add about a tablespoon of soy sauce.
  5. Combine all the cooked ingredients together, sprinkle the chopped green onions on top, and enjoy!
